Long before Dave Asprey, the creator of Bulletproof Coffee, popularized adding butter to coffee, Ethiopians have been making creamy cups of the beverage since as early as the ninth century.
Although the Ethiopian legend of Kaldi and his goats discovering coffee beans as a stimulant and as a beverage on the same day maybe exactly that, a legend – historians believe it is far more likely that coffee beans were chewed as a stimulant for centuries before a steaming cup of mojo was ever made.
Coffee beans were likely to be ground and mixed with clarified butter or ghee to form a thick paste, which was rolled into small balls then consumed as needed for energy during long journeys.
Today, the tradition of consuming ground coffee in ghee and adding clarified butter in brewed coffee remains in some areas of Ethiopia, especially in Kaffa and Sidamo regions. Locals believe adding the clarified butter to their brews will enhance flavour and nutrition to the beverage.
